Once the recipe is prepared, the meal is frozen very quickly, going from 0 to -15°C in a few minutes.

The frozen meal is vacuum-sealed in a freeze dryer. It is heated very gently, just enough for the water to pass directly from solid to gas, without ever passing through the liquid state. This phenomenon is called sublimation.
